Corvàia is a vineyard that is not afraid of heights: at 654 m above sea level, it is the highest Pinot Grigio vineyard in Italy. The roots of the vines, clinging more to living rock than to the soil, collect the volcanic deposits that give this wine its finesse, elegance and minerality. The perfect insolation of the dry stone walls, which accumulate the heat of the day and slowly release it during the night, the light ventilation, the productive vegetal balance, are all the natural conditions that affect the organoleptic qualities of this Pinot Grigio. The grapes are manually harvested, soft pressed, fermented in stainless steel, then aged on the lees for about 8 months in second and third passage French oak “tonnaux”, plus a further ageing in the bottle about 6 months before release. On the nose there’s aromas of pear, peach and incense, plus a rich and complex gustatory persistence, the drinkability supported by an acidity giving freshness and preservability to this rare white gem.
