Corvée was a French term used in the Middle-Ages to describe the activities and work of the Vassals, who would work on the land of superiors for free in return of shelter and protection; this is how 400 Km of terraced cultivations originated in Val di Cembria. Today, local wine producers sharing the same core values use the term Corvée in name of a project that concentrates on the production of high quality Trentino D.O.C. wines with the particular focus on sustainability. The Corvée Brut is produced from fine Chardonnay grapes grown on the steep slopes of the Cembra Valley at altitudes above 550m above sea level. The sandy, deep, stone-rich lands and the strong thermal excursions, typical of this high-altitude territory, condition the maturation of the grapes (slow and gradual) ensuring a correct acumen of the important mineral components and aromatics. The grapes are harvested manually at the start of September, soft-pressed, temperature-controlled fermentation in stainless steel tanks, followed by refinement of about 6 months. Finally, the wine matures on the lees for a further 24 months in 225lt French oak barrels. The resulting wine is extremely refined with beautifully smooth perlage and a broad and delicate bouquet resembling ripe fruits, custard and white chocolate. In the mouth there are light notes of almond and strudel with delicate hints of dried fruit, accompanied by a rich and persistent flavour.
